With the desire to apply the research results of teachers and gamers in practical processing, Thien has set up the NongLamFood startup project.
Thien said that fruit by-products (peels, seeds, membranes ...) often contain more health benefits than fruit or fruit. But the thing is that the shell is hard, tough, bitter or bitter so it is difficult to eat if not processed properly.
From then on, he and his students started to study the processing of fruit byproducts into nutritious food. The dried grape blossom is one of the first applications in the industry. Second product group processing applications are lemon cord drying. This product uses both lemon peel and lemon juice to combine the health benefits of both parts into one product.
"The skin contains antioxidant ingredients (polyphenols, vitamins, essential oils, anthocyanins, etc.) that are higher in flesh than fruit. The human body is aging due to oxidative processes in the body leading to many illnesses. The consumption of plant-based antioxidants and high fiber content is good for health, "said Thien, analyzing the effects of fruit peels.
